Pantin Hotels’ Culinary Partnership With Chef Albert Roux
Leeds-based Pantin Hotels is collaborating with world-renowned chef, Albert Roux OBE, for its first luxury boutique hotel, The Ellington.
Albert Roux will oversee menu creation in all areas at The Ellington in Leeds, ensuring that the finest produce is used, that it is in season, and where possible, sourced from local suppliers:

Using fine produce as a basis, the menu at The Ellington will comprise of a range of dishes which combine local produce with seasonality.

We are delighted that Chef Roux has agreed to work with the team at The Ellington. Not only will he be working us with on menu creation, he will be hosting a series of culinary weekends at the hotel.
In addition, he will oversee training of our senior chefs which includes them spending time with his team at ‘Le Gavroche’ in Mayfair, London, as well as being an integral member of the selection team for the Chef and Maitre d’ at The Ellington.
Situated in the heart of Leeds’ financial district, and opening in late August 2008, The Ellington, a member of the Leading Small Hotels of the World is a new build luxury boutique hotel, offering contemporary style and elegant design, and combining a vibrant atmosphere with an intimate feel. The Ellington will take pride in giving each guest personalised and attentive service.
Pantin Hotels was founded in 2006 by David Pantin, former Managing Director of Rocco Forte Hotels and Chairman of Dawnay Shore Hotels Plc. The company plans to open a number of luxury hotels in the forthcoming years.
David also has extensive experience internationally including past responsibility for Trusthouse Forte’s Caribbean hotel portfolio and for the development of one of the world’s largest hotels the $500 million, 1270 bedroom resort hotel, Our Lucaya in the Bahamas.
David was also Managing Director of London’s famous Café Royal between 1991 and 1994, during which he created its renowned cabaret business ‘The Green Room’, was awarded a Michelin star for the famous ‘Grill Room’ and doubled revenues of the overall operation of this landmark London venue during his tenure.
