Chef Profile: Andy North
Andy North is one of the many outstanding English chefs who have decided to make Australia their home. Andy’s passion for creating an exceptional dining experience spans over more than 20 years, most recently as Executive Chef of Melbourne’s Crown Entertainment complex.
The Executive Chef’s hat now proudly adorns Andy North as he takes over the reigns of the kitchen at The Sebel & Citigate Albert Park Melbourne.
Andy’s bursting resume of experience and awards also includes time at well-known hotels such as InterContinental London, winning the Master Chefs’ Grand Prix, The Sheraton Towers East Melbourne, The Hotel Windsor Melbourne and Sofitel Melbourne, where he was awarded two ‘Chef Hats’ in The Age Good Food Guide 2005, and the Australian Hotels Association’s national award for the ‘Best Fine Dining Restaurant in a 5-star Hotel’ for three consecutive years.
Andy also received one of the industry’s highest accolades by being admitted to the American Express Award Hall of Fame in Victoria.
True to the old adage that actions speak louder than words, Andy’s array of awards stand as a genuine testament to this remarkable Chef’s talent and skill in the kitchen.
Commenting on his achievements, Andy North said:
My passion for food is reflected in my dedication to sourcing quality ingredients for every menu. By only using the best, locally grown seasonal produce and keeping the cooking process fresh and simple, I can let the ingredients speak for themselves.
A prime example is my favourite recipe of caremelised pork belly, complemented by seared scallops, chorizo and bell pepper, on a rosemary and lemon jus - the marriage of slightly salty pork with the sweetness of the scallops, and the delicate spice of the chorizo, gives this dish great texture and flavour.
Training up-and-coming chefs is a priority for Andy. As part of this commitment, he is on the Bocuse d’Or Committee, an international network of chefs responsible for national selection of the prestigious World Cuisine Contest:
Drawing upon my 20 years experience within the industry which covers a range of cuisines such as Japanese, Chinese, Vietnamese, French and Modern Australian, I am excited about leading my brigade of 25 chefs in providing one of this city’s most enjoyable eating establishments; plus the opportunity to create programs and career paths for the next generation of chefs passing through this iconic Melbourne hotel.
Andy will lead the way as Windows restaurant; Atrium bar and lounge and the Café @ Sebel are all re-launched in July 2008, as part of The Sebel & Citigate Albert Park Melbourne’s multi-million dollar refurbishment program.
Located on the ground floor of this refurbished hotel at 65 Queens Rd Melbourne, with views of Albert Park Lake, Windows restaurant is open daily for breakfast 6.30am to 10.30am and dinner from 6:30pm until late Monday to Saturday. Enjoy an extensive à-la-carte menu with modern Australian and internationally inspired dishes. The seafood buffet is back on a Friday and Saturday evenings and a carvery buffet lunch will also be served every Sunday.
Café @ Sebel is a new licensed venue and will be open from 7am until 3pm Monday to Saturday serving coffee, specialties teas a fresh selection of pastries, salads and sandwiches. Atrium bar and lounge will be open daily from 3pm until late showcasing an extensive wine list, cocktails and snack menu.
