Matt Tebutt Cooks CountryMatt Tebutt, the chef behind the multi-award-winning Welsh restaurant The Foxhunter at Nantyderry in Monmouthshire, is bringing a taste of the countryside into the home with the publication next month of his recipe book Matt Tebbutt Cooks Country.

The host of UKTV Food’s Market Kitchen has compiled 150 rustic recipes which combine his love of modern British cooking with that of the countryside.

In his book, Matt Tebutt shows how to combine the best of seasonal British ingredients with recipes inspired by European and local dishes, conveniently compiled into seasons with mouth-watering dishes such as Elderflower fritters with yoghurt & lime, sour cherry pavlova, and rump of Welsh Lamb with aubergine, minted yogurt and flatbread.

Throughout the book, Matt places great emphasis on seasonality and explores the countryside from which the ingredients come.
