Martin Burge was brought up in Bristol and originally trained at Brunel Technical College. Having emerged with distinctions his first job was under Michael Croft at the Royal Crescent Hotel in Bath. When Croft moved to London to run the kitchen at Mirabelle, 21 year old Burge went with him, before moving on to Pied a Terre under Richard Neat.

Albert Roux, alongside his brother Michel, was recognised for his outstanding contribution to the hospitality industry at the annual Catey Awards earlier this month. The shortlist included Gordon Ramsay, Marco Pierre White and Sir Rocco Forte.

Andy North is one of the many outstanding English chefs who have decided to make Australia their home. Andy’s passion for creating an exceptional dining experience spans over more than 20 years, most recently as Executive Chef of Melbourne’s Crown Entertainment complex. The Executive Chef’s hat now proudly adorns Andy North as he takes over the reigns of the kitchen at The Sebel & Citigate Albert Park Melbourne.

Michelin-starred chef Jean-Christophe Ansanay-Alex is a graduate of les Maristes in Lyon and the Lycée Hôtelier Savoie Léman, at Thonon-les-Bains in the Haute Savoie. He became the personal chef to Christina Onassis in the mid 1980’s. At the beginning of July 2008 he launched a new gastronomic venture with the opening of l’Ambassade De L’ile in South Kensington, London.
